As a British person, a warm cup of tea is one of my favourite things on the planet. I never really cared much about Iced Tea until I was on holiday in America a few years ago, where there was an abundance of iced teas, which made me extremely happy as I walked around the Florida theme parks in the sweltering heat and humidity. As soon as i got home, finding a way to make an easy and refreshing iced tea became one of my top priorities.
This recipe for iced tea is made using regular tea (nothing fancy here!) Sweetened with caster sugar, and a generous splash of fresh lemon juice for a bright and summery flavour. And that’s it – incredibly simple and easy, but oh so refreshing and tasty. Served in a large pitcher filled with plenty of ice, this is perfect for sharing with friends whenever you want a refreshing non alcoholic drink. You could add in an extra tablespoon of sugar if you wanted to, but I found it perfect as it is, with the lemon flavour still being ever so slightly tart, making for an incredibly refreshing drink.

- 2 Tea bags
- 2 Lemons, large
- 4 tbsp Caster Sugar
- Water
- Ice cubes

Pop the kettle on to boil, and in a small mug place both tea bags and the sugar. Pour over the boiling water, and stir to dissolve the sugar. Allow to infuse for 4-5 minutes, as you want this to be strong.

Meanwhile, fill a large drinks pitcher with ice. Into this, squeeze the juice of the lemons, ensuring to extract as much juice as possible.

Remove the tea bags from the infused tea, ensuring to press with a spoon to ensure as much flavour has been extracted as possible. Pour the hot tea into the pitcher over the ice, and top up with cold water. Stir well, and serve.
